Ft. Wilderness – Chef Mike’s Pueblo Pork Chops Recipe

While they were staying at Disney’s Fort Wilderness the crew of “RV Today” was able to grab Chef Mike from the restaurant to have him give a recipe for a BBQ sauce to go on top of grilled pork chops that is easy to make on the road. The ingredients in this sauce:

  • ¼ cup of vegetable oil
  • 1 ½ cup small diced onions
  • 3 cloves mince garlic
  • 4 juniper berries
  • 1 bay leaf
  • ½ teaspoon ground coriander
  • ½ cup of crushed tomatoes
  • 1/3 cup of raw honey
  • 2/3 cup of apple cider vinegar
  • 1 ¼ cup of water
  • Ground Chili

    Never mind the berries and the coy amber…I thought this was a pork chop recipe!?!?

    Okay, I watched the video and it’s juniper berries (gin anyone?) and coriander not coy amber!

    Thanks so much Susan, for the clarification. I apologize for the mistake. The staff member who wrote out the recipe from the video isn’t much of a chef. :) I’ve now corrected these items in the recipe above and will more carefully review these going forward.
